Often described as “fuwa fuwa,” which translates to “fluffy fluffy,” it provides a subtle sweetness and a cloud-like crumb that melts in your mouth. At Milk Bread, we take pride in crafting our pillowy loaves using simple, quality ingredients. The secret weapon in creating this pillowy perfection is a technique known as “yudane” or “tangzhong” which involves creating a roux-like paste with flour and milk before incorporating it into the main dough. The dough is divided, rolled into long strips, and then meticulously coiled up creating the signature feathery layers visible in the final baked bread. Our mission is to share the authentic taste of freshly baked Japanese milk bread with our local community. We aim to share the joy of this beloved bread while fostering a deep appreciation for Japanese culinary culture.
